Grind garlics and lemon grass, chillies, lime leaves and red onion together. Boil water and put all in the ground ingredients together with chicken breast, leeks, coriander and pumpkin. Season it with salt and a bit of fish sauce.
10. Honey (optional) How to: Mix all the ingredients together. Leave them for a while before deep frying them. You can also bake them in an oven at around 220 degrees for 25-30 mins. I also put honey as an optional ingredient, but I never put them really since you can easily ruin the Thai authentic taste, though the taste of honey goes very really well with chicken in Chinese style cooking.
Boil prawns and squids in hot pot with little amount of water. Then, add all the vegetables in the pot and stir them all up. Flavor with fish sauce, soy sauce, sugar, chillies, lime juice. Take them out onto a plate, ready to serve.
