Beta-carotene, Antioxidants, Omega-3

บำรุงสายตา
ให้ทานอาหารที่มีสาร beta-carotene เยอะๆ ซึ่งที่อยู่ใน pigment ของผักผลไม้ที่มีสีส้ม หรือ เหลือง: แครอท ฟักทอง บรอคคอลี่ มะม่วง ข้าวโพด ผักบุ้ง ปวยเล้ง องุ่นแดง ส้ม แอปเปิ้ล ถั่ว ไข่แดง พริก

"บริหารดวงตาด้วยวิธีง่ายๆตามหลักของ ‘เบตส์’ นายแพทย์ชาวอังกฤษ ที่คิดค้นท่าบริหารจนมีชื่อเสียงไปทั่วยุโรปและอเมริกา...

เริ่มแรก ใช้อุ้งมือครอบที่ดวงตา แล้วนึกถึงภาพวันสบายๆ หรือการพักผ่อนสุดสัปดาห์ จากนั้นจินตนาการว่าเรากำลังมองสิ่งของสีสดใส เช่น ดอกไม้สีแดง เหลือง การจินตนาการภาพจนเห็นวัตถุที่ชัดเจน จะช่วยให้สายตาดีขึ้น

ต้านมะเร็ง รวมถึง prostate cancer ด้วย ทานผักผลไม้ไม่ต่ำกว่า 5 ชนิดต่อวัน โดยเฉพาะประเภทที่มี antioxidants เยอะๆ: บรอคคอลี่ berries ทั้งหลาย คึ่นฉ่าย (celery) พวก seeds & grains ต่างๆ ถั่วเหลือง แครอท หัวหอม กระเทียม กระหล่ำปลี แอปเปิ้ล แคนตาลูป มะเขือเทศ ปวยเล้ง

ป้องกันโรคหัวใจ ระบบหมุนเวียนเลือด เส้นเลือดตีบหรืออุดตัน (blood clotting) =
Omega-3
: ปลาทะเล salmon, mackerel, sardines, tuna, soybeans, ถั่ว หรือเมล็ดพันธุ์ต่างๆ cereal grains Omega-3 ป้องกัน arthritis เช่นกัน

ล้างพิษ คนจีนเชื่อว่า (อย่างน้อยก็พ่อผมคนหนึ่งล่ะ) กินน้ำแกงต้มเลือดหมูช่วยล้างท้อง (detoxify) หมายถึงล้างสารพิษที่ปะปนมากับอาหารที่เรารับประทานในแต่ละวัน แต่ไม่เคยเห็นงานวิจัยกล่าวถึง แต่ที่แน่ๆ ผลไม้ช่วยล้างท้องได้แน่ คุณสมบัติในการล้างพิษของผลไม้แต่ละชนิดก็ต่างกันไปตามประเภทดังนี้

1. ผลไม้รสเปรี้ยวจัด (acid fruit):
oranges - pineapples - lemons - limes - sour apples - tomatoes

2. ผลไม้รสเปรี้ยวน้อย (low-acid fruit):
grapes - ...berries - cherries - olives - sweet apples - plums - apricots - mangoes
3. ประเภทแตง (melons):
watermelons - cantaloupes - cucumbers
4. ประเภทให้พลังงาน (starchy fruit)
bananas pumpkins peanuts
5. ถั่วและเมล็ดพันธุ์ (nuts & seeds)
sunflower seeds - pumpkin seeds - sesame seeds
peanuts - almonds - cashew nuts - soy beans

ประเภทแรกช่วยล้างพิษได้ดีที่สุด รองลงมาคือกลุ่มที่สองซึ่งแม้คุณสมบัติด้านล้างพิษน้อยกว่า แต่คุณสมบติด้านอื่นดีมาก โดยฉเพาะผลไม้ตระกูล berries ซึ่งมีหัวโจกเป็น blackberries นำขบวนสารอาหารที่มี beta-carotene กลุ่ม melons มีธาตุเหล็กอยู่มาก ช่วยการทำงานของตับซึ่งทำหน้าที่ผลิตไวตามิน A อีกที กลุ่มให้พลังงาน กินแล้วอยู่้ท้องหายหิว กล้วยถ้ากินมากๆจะเพิ่มน้ำหนักได้ ผมเคยลองและเห็นผลมาแล้ว กินวันละหวีติดต่อกันหลายอาทิตย์ คนลดน้ำหนักจึงไม่ควรกินเกินหนึ่งผลต่อวัน กลุ่ม nuts & seeds ดีได้โปรตีนจากถั่ว


Cooking oils:
ดีสุดแน่นอน Olive oil หรือน้ำมันมะกอก สุดยอดของน้ำมัน รองลงมาเป็น น้ำมันสกัดจากเมล็ดดอกทานตะวัน Sunflower oil ตามมาด้วยน้ำมันถั่วเหลือง Soya oil และ Canola oil ตามลำดับ ส่วนน้ำมันจากสัตว์ไม่ต้องพูดถึง เป็นไขอันตรายเรื่อง Cholesterol และไขมันอุตตันในเส้นเลือด

น้ำมันพืชกินสดๆ แบบราด salad ย่อมดีกว่าน้ำมันพืชที่่ตั้งไฟให้เดือด เพราะโมเลกุลของไขมันแตกตัว ยิ่งถ้าเอาน้ำมันเก่า recycle มาใช้หลายรอบเ้่ท่าไหร่ ก็ยิ่งเป็นไขมันชั้นเลวมาเท่านั้น ฉะนั้นใช้น้ำมันทอดอะไรเหลือทิ้งไป ไม่ต้องประหยัดเก็บไว้ใช้อีกเหมือนที่ร้านขายอาหารทำกัน ดีกว่าเป็นมะเร็งเพราะน้ำมันเก่าก่อสารกระตุ้นมะเร็ง ดังนั้นน้ำมันที่ดีสุดคือน้ำมันมะกอกกินสดๆแบบราด salad!

ทำไม olive oil จึงเป็นสุดยอดของน้ำมัน?

ก็เพราะมันเป็นน้ำผลไม้ดีๆนี่เอง คั้นสดๆจากผลไม้สีเข้มสุดๆ เวลาไม่สุกสีเขียว เวลาสุกสีดำ กินได้ทั้งที่สุกและไม่สุก ที่ว่าเป็นน้ำผลไม้เพราะ คั้นมาจากผล olive โดยตรงไม่ผ่านกระบวนการต้มกลั่น ให้สุกเหมือนน้ำมันพืชชนิดอื่นๆ เรียกว่าคั้นกรองแล้วบรรจุขวดเลย เพราะฉะนั้นไขมันยังไม่แตกตัวเลยสักนิด ยิ่งเอามากินสด ราด Salad ก็จะให้คุณค่าอาหารมาก โดยไม่เพิ่ม Cholesterol น่าลองเอามาทอดไข่เจียว เพราะไข่เีจียวแบบบ้านเราต้องใช้น้ำมันเยอะมาก ซึ่งจะำทำให้ไข่เจียวมีคุณค่าขั้นมาทันที (อย่างน้อยก็คงแพงกว่าเดิมอีกสักสิบเท่า!) แต่ีอีกนั้นแหละ พอเอามาทอดไข่เจียว ไขมันก็แตกตัวทันทีทำให้คุณสมบัติลดลงอีก แต่ถ้าเทียบก็ยังดีกว่าทอดไข่ด้วยน้ำมันชนิดอื่น โดยเฉพาะน้ำมันหมูน่ากลัวสุด เพราะไม่เพียงเป็นไขมันสัตว์แต่วิธีรีดน้ำมันคือเอาไขมันหมูไปทอด สุดยอดจริงๆ ผมทำเป็นประจำ เป็นหน้าที่ตอนเด็กๆ แม่ให้ทำเสมอ แล้ว เอากากหมูที่ทอดมากินเ่ล่น อร่อยดี

คุณสมบัติของ Olive หรือ Olive oil ก็คือช่วยลด Cholesterol ในเลือด เหมือนไขมันจากปลาทะเลน้ำลึก อย่าง salmon หรือ tuna แล้วยังช่วยเรื่องการไหลเวียนของระบบเลือด ไม่ทำให้เป็น blood clot หัวใจก็ทำงานดีไปด้วย เป็นของดีของฝรั่งซึ่งกันกันมากในแถบประเทศ

ฺButter กับ Margarine อย่างไหนดีกว่ากัน

Butter ดีกว่า Margarine เลือกได้เลือก butter โดยเฉพาะที่มีส่วยผสมของ olive oil แต่ราคาจะสูงกว่าหลายเท่า

กินเนื้อใหม้เกรียมเท่ากับสะสมสารก่อมะเร็ง แล้วถ้าเป็นผักใหม้ล่ะ ก่อมะเร็งใหม เพราะที่ใหม้ไม่ใช่โปรตีน?

ความดันต่ำ ออกกำลังกายให้หัวใจเต้นแรงอย่างสม่ำเสมอติดต่อกันไม่ต่ำกว่าวันละ 20 นาทีทุกวัน

ตาแห้ง หาวนานๆ จนกว่าน้ำตาจะไหลออกมาเอง หลับตาและประคบตาด้วยน้ำอุ่น นั่้งสมาธิ

ปวดหัวไมเกรน หัวเราะนานๆ ติดต่อกัน นอน ว่ายน้ำ อาบน้ำ ปรับอุณภูมิห้องไม่ให้เย็นเกินไป นั่งสมาธิ

ผักส่วนใหญ่กินสดๆได้สารอาหารมากกว่ากินแบบปรุงสุก ยกเว้น beta-carotene ใน แครอทได้มากกว่าถ้าปรุกสุก

"Making the right tone in Thai"

Step one:

You need to know whether the syllable is live on dead syllable, because how a syllable is pronounced depends on whether it is live or dead. If the syllable contains the following final sounds: /k/ (which is realized by the alphabet ), /t/ (which is realized by the alphabet ด ถ), and /p/ (which is realized by the alphabet บ ป พ), it is a dead consonant. If the syllable does not have the final consonant, look at the length of vowel. If the consonant contains long vowel such as /a/, /e/, /u/, /ɛ/, /o/, it is dead. If the syllable contains other final consonants aside from the aforementioned three sounds, it is a live consonant. If there is no final consonant, look at the length of vowel. If it is long such as /aa/, /ee/, /uu/, /ɛɛ/, /oo/, ɔ/, it is live.

Step two:

You need to know that Thai consonants can be categorized into three classes as follows:

Low ค ฅ ฆ ช ซ ฌ ฑ ฒ ท ธ พ ฟ ภ ฮ ง ญ น ย ณ ร ว ม ฬ ล

N.B.

Don’t worry about these three steps above when you speak. Just play safe and make all the syllables as flat as possible. Most of the time, the context will help. Do not make your words too melodious because if you makes mistakes, it could sound very funny and even not understandable.

Put all the ingredients together in boiling water.
Omelette Spicy Soup (ต้มแซ่บไข่เจียว)

1. Thai omelette
2. Dried red Chillie
3. Onions
4. Tomatoes
5. Fish sauce
6. Thai soy sauce

Make Thai omelette with dried chillies. Then put the omelette to the boiling water together with sliced onions and tomatoes. Flavor with fish sauce.

Korean Seafood Spaghetti

Today’s specialty is an exotic hybrid cuisine from the traditional Italian spaghetti stir-fried with the Korean red chilli paste. The result is unbelievably delicious! It is really an exotic dish where you can enjoy the best of Italian and Korean at the same time.


Ingredients

1. Spaghetti noodles
2. Seafood Flake
3. Prawn
4. Cabbage
5. Sesami oil
6. Lobo's suki sauce
7. Korean read chilli paste
8. salt
9. sugar

How to:

Boil the spaghetti noodles first. Then, stir fry cabbage with korean red chilli paste first before adding other ingredients and the boiled noodles at last. Flavor with sesami oil, a bit of salt and sugar.

ข้อคิดในการตั้ง slogan ภาษาอังกฤษ

ความน่าประทับใจของ Slogan ภาษาอังกฤษอยู่ที่ความเข้าใจความหมายของมัน ที่ทำให้กลุ่มเป้าหมายฟังแล้วรู่้สึกว่า 'ใช่เลย' หรือสื่อความหมายได้ 'โดนใจ' บางทีก็ซ่อนความหมายที่ต้องคิดลึกๆ ถึงจะ 'get' แต่ด้วยข้อจำกัดของคนไทย จึงต้องใช้ภาษาที่เข้าใจง่าย จะเอาเท่ห์เหมือนสินค้าแฟชั่นคงไม่ได้ เพราะสินค้าพวกนั้นเน้น image อย่างเดียว บางทีฟังก็ไม่เข้าใจ แต่เท่ห์ก็พอแล้ว เช่น Turn it on ของ PUMA ที่เราฟังแล้วรู้สึกว่า Slogan เหล่านั้นเพราะ เข้าหู และลงตัวดี ก็เพราะมันฟังกันจนคุ้นหูแล้ว เรียกว่าไม่จำเป็นต้องเพราะ แต่ฟังกันจนเพราะไปเอง เรื่องความเพราะนี่ ก็ต้องเข้าใจว่าจะเอาให้คนไทยฟังเพราะ หรือฝรั่งฟังเพราะ เพราะอาจเข้าใจข้อความต่างกัน ผมว่าข้อความที่ฟังดูเพราะน่าจะเป็นข้อความเรียบง่าย แต่่จริงใจและกินใจ มากกว่าเสียงสัมผัสของคำในเชิงสำนวนภาษา

สินค้าบางประเภทบางทีก็เลี่ยงที่จะสื่อให้ตรง เพรานอกจากจะฟังดูเชย บางทียังดูแคลนภูมิปัญญาของผู้บริโภคอีก เช่น JUST DO IT ของ NIKE สื่อความหมายไม่ตรงเลยสักนิด แต่กลับติดตลาดผู้บริิโภค เพราะได้แนวคิดและวัฒนธรรมแบบตะวันตก โดยเฉพาะความเท่ห์แบบวัยรุ่นมะกัน ที่ไม่ต้องคิดเยอะ อยากทำอะไรทำเลย ทำแล้วค่อยคำนึงถึงผลของการกระทำทีหลัง ซึ่งเป็นลักษณะของวัยรุ่นโดยแท้ (แล้วค่อยให้ผู้ใหญ่ตามแก้ปัญหาทีหลัง) ทำให้โดนกลุ่มเป้าหมายสุดๆ ทั้งในเชิงกายภาพและวัฒนธรรมเมืองนอก โดยส่วนตัวไม่ชอบ slogan นี้ และไม่เห็นว่าจะเข้าท่าตรงใหน ขัดกับสังคมไทยด้วยซ้ำ ที่สอนให้คิดให้รอบคอบ เกรงใจ (คำนี้แปลกนะ ภาษาอังกฤษมีคำว่า considerate แต่ความหายต่างกัน) และเห็นอกเห็นใจความรู้สึกของผู้อื่น ก่อนการกระทำเสมอ

สินค้าของ a เป็นสินค้าที่ ไม่ได้ขายมวลชน จะสื่อความหมายที่เป็น abstract มากๆอย่างที่ a ว่า "รักคุณเท่าฟ้า" ซึ่งนอกจากจะฟังดูเชยสนิท สื่อไม่ตรงความหมายแล้ว ยังฟังดูเสแสร้งไม่จริงใจ อย่างน้อยก็ในความรู้สึกผมที่ใช้บริการการบินไทยมาโดยตลอด สินค้า a เป็นสินค้าที่เป็นตลาดเล็กๆ และเฉพาะกลุ่มจริงๆ กลุ่มที่มีลักษณะเป็นผู้ใหญ่ มีความละเอียดอ่อน และมีความคิดวิเคราะห์ ต้องระวังในเรื่องการใช้คำให้มาก ไม่ให้เท่ห์จนเกินไป หรือดีจน 'over' เพราะมันจะ meaningless! หรือไร้สาระ แทนที่จะเป็น image ในทางบวก อาจได้รับผลในทางกลับกัน เพราะคน 'หมั่นใส้' (คำนี้แปลกนะ a ภาษาอังกฤษไม่มีคำเทียบเคียงได้เหมือนเลย!)

สรุป slogan ของ a ผมแนะนำว่าน่าจะมีลักษณะดังนี้
- อ่อนน้อม ถ่อมตน
- เข้าใจง่าย แต่เชย ดีกว่า ฟังเทห์ แต่ลูกค้าไม่เข้าใจ
- สั้น จำง่าย ซึ่งเป็นลักษณะ slogan ทั่วไปอยู่แล้ว
- คนไทยอ่านออกเสียงได้ รวมถึงเจ้าของสินค้าเองด้วย
- ตรงไปตรงมา ไม่เจ้าเล่ห์ โปรยเสน่ห์ด้วยถ้อยคำหวานจ๋อย (ha ha...)

Abstract

A basic repertoire of modality and intensity in English is important in helping learners fine-tune their meaning appropriately, but these linguistics features are generally underused by EFL learners. This study hypothesizes that Thai learners tend to use modals and intensifiers more in the online bulletin board than in student academic essays. Two parallel learners’ corpora, a total of 115,980 words, are used to compare between their writing outputs in the electronic bulletin board and student essays. A framework has been developed based on the existing concepts of modality and degree of intensity. It attempts to capture the four semantic areas including hedging, boosting, committal, and inclination. The analysis includes modal auxiliaries (e.g. will, may), epistemic stance adverbs (e.g. maybe, probably), adjectives (e.g. certain, possible), copular verbs other than ‘be’ (e.g. tend, seem), and intensifiers (e.g. rather, somewhat, totally). The findings show that Thai EFL learners are able to fine-tune their expression with subtlety using these lexical and grammatical devices more in the online than the offline writing.

Chicken Balaclava


Ingredients

1. Dried red chillies

8. Indonesian ABC sauce
9. Thai sweet chilly sauce (made of tamarine)
10. Tomato sauce
11. Salt
12. Sugar
13. Topioca starch
14. Cooking oil

For this week's specialty, I proudly present my newly created hybrid recipe, the mixture of Chinese Sweet&Sour Chicken and Thai's Chicken with cashew nuts. Fry dry chillies (with minimal cooking oil) first to get the best of dry chilli's aroma, then deep fry the chicken separately so that it is cryspy from the outside but tender inside. Mix topioca starch with warm water first. Then put all the prepared ingredients together to stir fry.

ความรักทำให้ผมอ่อนแอ… จำได้ว่าความรู้สึกนี้เกิดขึ้นครั้งแรกเมื่อเสียพ่อไป หลายปีทีเดียว... ตอนนี้ผมรู้แล้ว และเข้าใจแล้วว่า ความรัก ความคิดถึง และความห่วงใยมีคุณค่ามากเพียงไร รู้สึกเสียใจทุกครั้งเมื่อคิดถึง 1 ปีที่ผ่านมา ที่เสียใจเพราะไม่เคยเห็นคุณค่าของมัน และทำให้คนที่รักต้องเสียใจอยู่หลายครั้งเพียงเพราะทิฐิในใจของตน แต่ครั้งนี้ต่างจากครั้งเมื่อเสียพ่อไป เพราะวันนี้ผมเห็นคุณค่าของคนที่ผมรักในยามที่ยังไม่สายเกินไป ผมจะเก็บมันไว้ให้นานแสนนาน...

The train from Olso took me back to Copenhagen, with one stop in Goteborg. I spent two nights in Copenhagen staying at the City Hostel before flying back home in Bangkok. Those twenty days of my journey in the four Scandinavian countries have finally ended on November 24, 2007 with lots of good memories and productive outcomes. And yes... it occurs to me... there has never been a trip more exciting than a journey back home.

Aside from the cold, Norway is a nice and quiet country. Particularly, the train journey from the capital Oslo to a more picturesque Bergen was relaxing. You can also order some food and beverages while enjoying the scenic view of snowy mountains and beautiful lakes sliding on the window by your side. After spending night and day on the train, I finally arrived in Bergen, a small town located in a scenic gulf surrounded by mountains which overlooks the small but friendly town. Most teenagers come here for skiing, but I am too old to get excited over the sports, so I was wandering around the town looking for something to eat and ended up having a piece of waffle in a shopping mall. I like it very much, the best waffle I've ever had! Though not so many, Thai restaurants can still be found in almost every cities I have been in Scadinavia and in Bergen alone there are two. The food was so good, if you don't mind paying almost 1,000 Baht for a bowl of Tom Ka Gai while in Thailand you can get the same thing in the restaurant for less than 100 Baht!

Here I visited the University of Gergen and met people who are behind the construction LOB (Lancaster-Oslo-Bergen) Corpus and COLT (Bergen's Corpus of London Teenage Talk) corpus as the research center of the two corpora is here. After a night here in Bergen, I headed back for OSLO, the capital of Norway, which is a little less attractive to me, so I did not spend the night here. Instead, I booked a train to Copenhagen in Denmark via Goteborg in Sweden.

Dear Colleagues,

Two days is enough for me to see the contradiction of atmostphere in Stockholm, which is really a city of fashion and history where you can wander around old and elegant buildings separated in 14 islands. For good memory, I booked a night in a hostel which was renovated from a hundred-year-old red boat. But what springs out to my mind at the moment is the Central Railway Station, where my luggage was stolen with all the food and surviving gears in it, including medicine. Though, that has not changed my good memory for the Danish as I am very sure that the guy who stole my bag was an immigrant, not the local. He sort of hung around my bag when I was trying to make an online-booking for a night in Copenhagen. The next thing I know was that I only saw one bag sitting next to me, instead of two. Feeling a bit panic, I was thinking if I should report to the police or run around at the station looking for the guy. If I report this to the police, I will be interviewed for some time and I may miss the train to Oslo, Norway, which was scheduled to arrive in 20 minutes. If I decide to look for him, I won't recognize him clearly anyway. So, after pondering for a while, I realized that the train has already arrived and was going to leave the platform. I was runninnnnng and made it to be on board just 3 seconds before it sets off. I was so close of missing that last train of the day!

I arrived in Stockholm by the night train yesterday very early in the morning, so the shops were all closed and the city has not been fully awake yet. Wandering around in the cold, I found the costs of living here very high. Using the toilet here, for instance, costs me 5 Swedish korna, or approximately 30 baht. Haing a shower is 20 SEK, or 120 Thai BT. A bowl of plain rice is 10 SEK extra, or 60 baht. A light meal at McDonald's would cost around 400 baht, I mean just a cheap burger and coke. This makes the cost of living even in Tokyo become comparatively cheap!, at least compared to when I was there in 2003. Needless to say, the costs of accommodation here is also very high and that applies as well to the youth hostel. For what I have paid here in a hostel or backpacker, I could as well open a room in a five star hotel in Bangkok. So, I decided not to stay longer than two nights as I would be broke before going back home.

I found myself in the heart of Scandinavia as they said Stockholm is Scandinavia's capital. In the city, I was very surprised to see Stockholm very much a fashion city, which is located midst many historical beautiful ancient buildings. The area is actually formed by 14 islands, making it the Vanice of Scandinavia. The size of the shopping area here is quite spacious, making MBK and Siam Sqare in Bangkok look relatively small. Surprisingly, I have not found IKEA in its mother land here yet. In many department stores, they sell mostly the fashion products, and yes... fashion-related things mainly, so I had a had time finding just a pencil to buy! Still, a hot-dog vendors follow you everwhere so long as there are crowd and that is good for a guy like me who is out of fashion, but more into eating!

My next trip is to go about in Norway (Oslo and Bergen in particular) in search for the origin of the LOB (Lancaster-OSLO-Bergen) Corpus. Having had a talk with Prof. Stenstrom the day before, what has also come to my interest is now COLT Corpus, which is originated in University of Bergen. I plan to spend a night at Bergen Montana Hostel before heading back to Oslo. Spending a night on train is not so bad an idea actually as you could feel like the time for transportation is shortened, of course if you don't mind to squeeze yourself in a compartment of six bed bunks where you can hear people snoring. Even if you travel in during the day, an hour does not seem to be very long as you could enjoy the beautiful view where every scence looks like a picture that fits in the train's window frame, or a moving video documentary, perhaps on Scandinavian countryside, sliding on your your side. One more time that I find myself waiting for the night train to Bergen which will arrive tonight at 10 pm. Gotta get some dinner before that. Though it costs me a fortune, Thai food is something I cannot live without! Oh... hungry now just to think of it.

I arrived in Goteborg on 14 November. Finding my way to the Slottskolmen Hostel is not at all a problem as I had been given clear directions from people who work there. I was so hungry that night as I had skipped Lunch, so I went straight to a Thai restaurant which is only two blocks away from the Hostel, ordering Tom Ka Gai and Prawn fried rice.

The next day, I visited the University of Goteborg where I had an appointment with Professor Aijmer. The meeting went very well. As I have thought, she is a kind and helpful lady. She commented on my work and suggested some articles that might be useful to my research. After the meeting, I only had an hour to wander around in Goteborg before catching a train back to Lund. Goteborg is not a very big city anyway if you are only concerned with shopping so I managed to spend an hour walking in the city shopping center and spent some time in the city old area.

In the evening, I finally returned to Lund, a week after the ASLA Conference had ended. I slept in the same hostel and met Professor Stenstrom at the auditorium of the Department of Literature and Translation at Lund University. We had an interesting discussion about my work. She is such a nice and kind lady to talk with. She promised to give me access to the COLT (Corpus of London Teenage Talk) which would be beneficial to my study, so I could compare my quantitative findings of the Thai NNSs with those of English NSs.

Now, I am waiting for the train to leave at 23:23 pm to for Stockholm. I should arrive there in the morning. So, I have 7 hours to spare before I will catch the train tonight.

Now I'm in Helsinki, Finland, staying at The Olympic Stadion Youth Hostel.

Copenhagen is the port where I first set foot in Scandinavia on November 6, 2007. Living off hot dogs everyday is not that bad, actually. Probably, the best hot dog I have ever had, with the French dressing cream, and also the most expensive one ever tried as well. Though tough for me, I found myself living for a few days without Thai fish sauce and rice. On the same day, I had to hurry to catch the train to Lund, the small friendly university town in Sweden which is located an hour away from the capital of Denmark, to present my paper at the ASLA conference 2007 at Lund University.

The conference went well with quite a few comments and questions from the floor. I happened to talk with Professor Sylvianne Granger, the conference plenary speaker and the founder of learner corpus ICLE who was sitting next to me. Having spent two nights at the unique hostel which has been renovated from the old train bogies, and one night at the bed and breakfast homestay, I headed off to Kouvola in Finland for another conference 'AFinLA Conference 2007' organized by the Department of Translation Studies, University of Helsinki.

I was welcomed by the cold winter breeze of Finland with the temperature of 2 c. In spite of the coldness, I had to wait in the freezing rain for an hour for a train at Tikkurila railway station. The wind was strong enough to blow away a 10 euro note right from my hand. Lucky me it is not a 100 euro one. The train to Kouvola finally arrived and it took me to the town at midnight. Lucky enough, i was helped by a Finnish lady and two men who offered me a ride to the hotel where I had booked the night. Now... this is my first impression for the generosity of the Finnish. Very impressed, indeed! I would have standed there for ages waiting for taxi at midnight in the rain, had they not offered me the ride.

November 10, 2007 marks the day of my second presentation, and the second day of the conference. I woke up and saw the first winter snow from the hotel room window. That was the first time when I see snow falling. Arriving at Helsinki University one hour late as I was a bit confused with time lapse between Sweden and Finland. Still, I managed to present my paper in time and everything went well. After the conference, a volunteer girl walked with me to the main street as the land is all covered with snow and you can easily get lost in direction in the weather like that. Kouvola is a small homey town and I regret having a chance to stay there longer to meet more nice people.

I headed back to the capital Helsinki again and booked 4 straight nights at the Hostel Stadion where I am now writing this blog. The weather gets worse than before with the whole city looks foggy and misty. Houses and cars are all painted in snow white under the temperature of -4 c. That was not so bad as it may sound as the Finnish have their way of cooking themselves up in the sauna. I did tried staying in the 85 c. sauna, but could not stay there longer then 5 minutes, fearing that I will be like a BBQ chicken in the oven. Then I jumped into the cool water pool where everyone swim in their birthday suits. As well, I did not miss to try the yogurt here in the original land. The yogurt here tastes very good. Of course!

At the hostel here, I met two nice ladies, one working as a chef and the other a cleaner. The chef cooked me a yummy Thai ommelette with rice and she also refilled my bag with rice and fish sauce. Right... two important ingredients that Thai people cannot live without! Getting my bag reloaded with food from the kind lady, I am now ready for the trip back to Sweden. This time I am going to meet two famous linguists. First, I will go to Gothenburg to meet Professor Karin Aijmer before heading south back to Lund where I will meet Professor Anna-brita Stenstrom.

ระยะห่างระหว่างอาพาร์ตเม็นท์ Bosworth ที่ผมอยู่ กับมหาวิทยาลัย Macquarie นั้น แม้ห่างเพียงช่วงถนนเส้นเดียว แต่ก็ใช้เวลาเดินเท้าราว 15 นาทีนับแต่ออกจากบ้านจนถึงตึกคณะ เส้นทางนี้เป็นเส้นทางที่ผมใช้เดินเท้าไป-กลับทุกวัน ไม่ว่าจะไปห้องสมุด ไปคณะ ไป Shopping mall หรือจะไปขึ้นรถเมล์เข้าเมือง และทุกครั้งที่เดินทางผ่านเส้นทางนี้จะต้องข้ามถนนตรงสึ่แยกใหญ่ซึ่งเป็นจุดตัดระหว่างถนนสาย Balaclava กับสาย Epping

Chicken Kaeng Omm

Ingredients:
1. Garlics
2. Lemon grass
3. Loas Corinander
4. Thai red onions
5. Kirffir lime leaves
6. Chillies
7. Leeks
8. Pumpkin
9. Fish sauce
10. Salt
11. Chicken breast
12. Chicken stock powder (optional)

How to:

Grind garlics and lemon grass, chillies, lime leaves and red onion together. Boil water and put all in the ground ingredients together with chicken breast, leeks, coriander and pumpkin. Season it with salt and a bit of fish sauce.






Thai Fried Chicken Wings
1. Chicken wings
2. Koki flour
3. Kanorr chicken stock powder
4. Meggie sauce
5. Thai Soy sauce
6. Sugar
7. Cooking oil (optional)
8. Garlics (optional)
9. Fish sauce (optional)
10. Honey (optional)
How to:
Mix all the ingredients together. Leave them for a while before deep frying them. You can also bake them in an oven at around 220 degrees for 25-30 mins. I also put honey as an optional ingredient, but I never put them really since you can easily ruin the Thai authentic taste, though the taste of honey goes very really well with chicken in Chinese style cooking.

Yum Sea Food

Ingredients
1. Prawns
2. Squids
3. Fermented garlics
4. Limes
5. Chillies
6. Fish sauce
7. Soy sauce
7. Sugar
8. Onions
9. Tomatoes
10. Cabbages

How to:

Boil prawns and squids in hot pot with little amount of water. Then, add all the vegetables in the pot and stir them all up. Flavor with fish sauce, soy sauce, sugar, chillies, lime juice. Take them out onto a plate, ready to serve.

Mu Pad Prig King

Ingredients:
1. sliced pork
2. Thai chilli paste (Pad Prig King paste)
3. fish sauce
4. oyster sauce
5. capsicum
6. onion

How to:
1. Stir fry chilli paste with half a cup of cooking oil. Add pork and other ingredients. Taste it. Add whatever you like.












Kao Pad Mu

This is one of the first my dishes.

Ingredients:
1. sliced pork

2. garlics
3. pepper
4. fish sauce
5. oyster sauce
6. soy sauce
7. salt
8. sugar
9. onion
10. tomato

How to:
Chop up garlics very fine and fry it with sliced pork in cooking oil. Then add in slices of onions and tomatoes. Stir them all up and flavor with all the sauce.

Tips: Use lots of garlics and white pepper. This is where the main flavor comes from.

Kana Pad Kai

Ingredients:
1. Chicken
2. Chinese Broccoli
3. Fish sauce
4. Sauce sauce
5. ABC sauce
6. Garlics
(N.B. Oyster sauce is optional. This time I didn't use it.)

How to:
Frist, marinate chicken with soy sauce and sugar. Chop up garlics and stir them in hot oil. Fry marinated chicken. Then add the vegetables. Flavor them with all the sauce.












Pad Gana Bean Sprout

Ingredients:
1. Two cans of fermented Gana vegetables
2. One bag of Bean Sprouts
3. Fish sauce

4. Sesame oil

How to:

Fry gana vegetables in cooking oil and sesame oil. Pour in bean sprouts and stir fry till cooked. Then, add fish sauce.

Ingredients:
1. Ka-norr Chicken powder
2. Quangdong vegetable
3. Starch
4. Oyster sauce
5. Meggie sauce
6. Salt
7. Sesame oil

How to:
1. Fry chicken powder in sesame oil and cooking oil. Then, put vegetable and add flavor with salt, sugar, oyster sauce, Meggie sauce. Stir starch in warm water and add it in to the pan. Fry till the vegetable are cooked.

เติ้ลคิดถูกแล้วล่ะเรื่องการไม่มีโรคเป็นลาภอันประเสริฐ คงเป็นเพราะอานิสงฆ์จากการสวดมนต์ไหว้พระทุกวันอย่างเติ้ลว่าที่ทำให้เติ้ลได้คิดในข้อนี้ คนส่วนใหญ่คิดข้อนี้ได้ก็เมื่อมีอายุมากขึ้นแล้ว เมื่อโรคภัยเริ่มถามหาน่ะ มันเลี่ยงไม่ได้นะ ทำให้ต้องกลับมาแสวงหาความสุขที่แท้จริงในชีวิตที่วัตถุและของมีค่าไม่ใช่คำตอบ แต่หลายคน (รวมทั้งพี่ด้วย) ต้องรอเรียนรู้จากประสบการณ์ หรือรอให้เรื่องเกิดก่อนจึงคิดได้ แต่ก็สายเสียแล้ว ก็เป็นข้อเตือนใจนะว่าอย่าใช้ชีวิตอย่างประมาท เงินทองมากมายก็หมดได้ ร่างกายที่แข็งแรงก็เจ็บป่วยได้ พี่ตั้งใจว่าอยากเรียนให้จบเร็วๆ แล้วกลับไปทำประโยชน์ให้สังคมนอกเหนือจากบทบาทของอาจารย์ ยังไม่รู้เหมือนกันว่าพี่จะไปทำอะไร แค่มีความตั้งใจเท่านั้น เอาเป็นว่าคิดเป็นเรื่องๆไปดีกว่า แค่เรื่องเรียนให้จบได้นี่ก็ไม่ง่ายแล้ว เครียดอยู่ทุกวันก็เรื่องนี้ พี่ว่าคนเรามีเงื่อนไขที่ต่างกันไป และไม่ว่าจะทำสำเร็จหรือไม่ ก็ยังมีชีวิตที่ต้องดำเนินต่อและต้องทำให้ดีที่สุด เติ้ลเองก็เหมือนกัน เรียนจบแล้วก็ยังต้องมีภาระหน้าที่และชีวิตที่ต้องดำเนินต่อ บางทีก็ไม่ใช่เพื่อตัวเอง แต่เพื่อผู้อื่น เพื่อคนที่เรารัก เช่น คุณพ่อ คุณแม่ และน้องๆ เป็นต้น เพราะ ... ชีวิตเรามีคุณค่าเสมอกับคนที่อยู่รอบตัวเรา และคนอื่นๆในสังคม สุดแท้แต่เราจะสร้างคุณค่านั้นให้เกินขึ้นได้มากน้อยเพียงใด ดังนั้นต้องทำให้ดีที่สุด

Boiled Cabbage with Shintake

Ingredients:
1. Caggage
2. Shintake mushroom
3. Dried Bean Curd
4. Cooking oil
5. Chinese soy sauce
6. Fish sauce
7. Meggie sauce
8. Oyster sauce

How to:

Cut a cabbage in to 6-8 pieces before frying them in cooking oil till it turns a little brownish. Add shintake and continue frying. Add one or two bowls of water. Let it simmer for 5-10 minutes before adding in the bean curd. Boil around 20 minutes till the cabbage is soft as the way you like.

American Fried Rice

Ingredients:
1. Tomato
2. Onion
3. Capsicum
4. Raisin
5. Cucumber
6. Rice
7. Tomato sauce
8. Oyster sauce
9. Meggie sauce
10. Fish sauce
11. Sugar
12. Salt
13. Butter
14. Cooking oil
15. Eggs
16. Ham
17. Chicken


How to:

Stir fry all the vegetables with ham in butter and vegetable oil. Then, pour in the rice. Stir them all up and add all the sauces. Slice tomato and cucumber and put them on top together with sunny side-up fried egg. For the fried chicken, marinate it with Chinese soy sauce, oyster sauce, Meggie sauce, salt and fine sliced garlics before frying and / or baking till grilled.

Pad Thai (ผัดไทยกุ้งแช่แข็ง)

Ingredients:
1. Egg
2. Prawns
3. Dried shimps
4. Bean Spouts
5. Sliced carrots
6. Fine-ground beans
7. Rice noodle
8. Sliced tafu
9. Sugar
10. Fish sauce
11. oyster sauce
12. Pad Thai paste

How to:
Leave rice noodle in warm water for 5-10 mins. Fry 'Pad Thai' paste with dry shrimps in hot oil. Add prawns, tafu, fine-ground beans, and carrots. Stir them all over before putting softened rice noodle. Stir fry and flavor with fish sauce, oyster sauce and sugar. Put egg in at last and serve hot.

BBQ Pork (Mu Yang)

Ingredients:

1. Coriander's root
2. coconut milk
3. vegetable oil
4. pork
5. soy sauce
6. oyster sauce
7. maggie sauce
8. sesame oil
9. sugar
10. sliced garlics

How to:
Mix all the ingredients with pork. Leave it overnight before frying.











Hokkien Combination with Rice (ข้าวราดหน้าสไตน์ฮกเกี้ยน)

Ingredients

1. Calamari or quids
2. Diced ham
3. Sliced onions
4. Carrots
5. Oyster sauce
6. Maggie sauce
7. Chinese soy sauce
8. Korean sesame oil
9. Tapioca starch powder

How to:
Stir fry calamari and diced ham in hot oil. Add sliced carrots and onions and mix with oyster sauce, maggie sauce, soy sauce and sesame oil. Mix and stir tapioca starch powder in warm water before mixing into the ingredients. Stir fry till cooked.

Chinese Sausage Baked Rice (ข้าวอบกุนเชียง)

Ingredients:

1. Chinese pork sausage
2. Steamed rice
3. Dried Matsutake
4. Dried shrimes
5. Carrots
6. Onions
7. Oyster sauce
8. Soya bean sauce
9. Maggie sauce
10. cooking oil
11. sugar

How to:

Put dried Matsutake and shrimes in hot water. Leave them for 15 minutes. Cook rice and add some oyster sauce, soya bean sauce, maggie sauce, and cooking oil into the rice cooker. Cook them all for 5 mins before adding the water you have left from the dried Matsutake and shrimes. Cook again for 5 mins before adding in all the rest of ingredients. Then, cook again until rice is cooked all over. Allow the rice to simmer for 10 mins after it is cooked. Yummy!

Giving is receiving. You do it for your pleasure, not somebody else!

I think, I've heard an expression "Giving is receiving." somewhere before and that was long time ago the last time I heard that. I have to say long time ago because it wouldn't be easy to hear that very often, nowadays, especially during the digital age when we are all pampered by the aroma of capitalism and materialism, i.e. spending money seek for what we think is best for us, doing online transaction via the internet. With this concept in mind, we seem to focus only on ourselves and forget the fact that we all human beings live in the same world and share the same destiny. We most of the time think inside ourselves and that's why we sometimes suffer from happiness or sadness. I think it is wise to think out of ourselves for some time and look at others. As I said, all share the same destiny. That means people's happiness and sorrow are in some way linked to us by destiny.

So far as we have enough money to spend for all we need to pamper ourselves in the pond of lust and desire, we don't seem to care much about others. How can we give, not realizing the value of giving. Sounds a bit far from possible. I personally believe that people who give are those who suffered before in the course of their living and at some point realized the value of what they received from other people around them. That's how they learn the value of 'giving', not from the direct meaning of giving itself.

It was not until now that I really perceive this meaning -which could be true based on my direct experience. But since you're already reading up to here, I think you may be a kind of person who might agree with what I've said so far and I'm gonna convince you even more with further more examples.

When you give, you receive right away. There is no waiting for what you did to pay off and there is no use, actually, to do so. It's pointless waiting for the good deed you did to return as they say "What goes around, comes around." To me, you receive somthing right at the same time as when you give.

I have some reasons in saying so:

You have to know the value of 'giving' first before you will receive this kind of pleasure.

Stir Fried Veggies (8/10)

Ingredients
1. Carrot
2. Broccoli
3. Garlics
4. Oyster sauce
5. Fish sauce
6. Sugar
7. Cooking oil

8. Hot water

How to:

Fry garlics in cooking oil. Then, put slices of carrot, broccoli. Stir them all up and mix with fish and oyster sauce. Pour a bit of hot water to make it juicy. Serve hot.

Buab Pad Kung Haeng (บวบผัดกุ้งแห้ง) 9/10

1. 'Buab'
2. Dried shrimes
3. Garlics
4. Cooking oil
5. Fish sauce
6. Soy sauce
7. Hot water

How to:
Fry garlics with cooking oil and dried shrimes. Then stir fry all the ingredients with sliced 'buab'. To make it juicy, put a bit of hot water in it. I couldn't find the right word in English for 'buab'. Can anybody tell me?

Mu Pa (Crispy Pork Mince) 9/10

Ingredients:
1. Pork Mince
2. Garlics
3. Corn Flour
4. Salt
5. MSG

This is one my favorite menus that I loved very much when I was a child. I always had it before going to school. To find out the recipe for me, my mother even called the ex restaurant owner who used to sell this food.

How to:
Chop up the garlics into small pieces keeping some garlic peels. Stir all the ingredients with pork mince and deep fry it. The more flour you put in, the more crispy it will be.

Meaning of Life

Life is a process that keeps on going no matter what happens. Anything that seems to be so miserable shall pass and everything that seems to be happy will end. Unlike in the drama, there is no such thing as happy ending or sad ending. There is always life after that. There are lives after graduation, there are lives after marriage, and there are lives after lives.

Everything that comes into lives is just a point in the process of continuum, so just take everyday as it comes and do our best in that point in process. The world is not going to explode if you are called 'disabled' or if you are 'crippled', whatever it is, lives have not yet to end. Until we pass away shall we know the very end of our lives, so don't give up, just hang on to dear lives till we see the last scence where we shall sleep tight.

Chicken Galanga (Kai-tom-ka) 9.5/10

Ingredients:
1. Chicken
2. Galanga
3. Kiffirs
4. Lemon Grass
5. Chillies
6. Lemon
7. Coriander
8. Coconut milk
9. Onions
10. Fish sauce
11. Soy sauce

How to:
First, boil coconut milk. Then, put sliced galanga, kiffirs, lemongrass, and chillies before seasoning with fish sauce, soy sauce, lemon juice. Next put onions and let it simmer for a while.
Put coriander on top before serving hot with Thai jasmine rice.

California Sushi 9.5/10
Gokhun and Hisae taught me how to make this. Today Gokhun and Hisae had planned earlier to make sushi for dinner today, but I didn't know so I coincidently bought salmon sushi at the shop. It turned out that sushi we made is much much better than the the ones I bought.

Ingredients:
1. Japanese rice
2. Vinegar
3. Avocado
4. Cucumber
5. Lettuce
6. Mayonnaise
7. Tuna
8. Roasted Seaweeds
9. Sweet omelette
10. Sugar
11. Sushi mat

How to:
Before making sushi, prepare two things: (1) rice mixed with vinegar and sugar, (2) tuna mixed with mayonnaise. Put roasted seaweeds on a sushi mat. Spread rice on top of seaweed covering 70 percent of the seaweed plate. Then, put sliced cucumber, avocado, lettuce, tuna, and omelette in the middle of the seaweed. Roll them up nicely. Then, cut with sharp knife into pieces. Serve with Japanese soy sauce and wasabi.
